Walnut, Ricotta, and Honey Parfait

I don't keep too many sweet things in the house unless I'm baking or making a dessert. So when the cravings hit I'm hard pressed to find something that'll satisfy my sweet tooth. However today I decided to get a bit creative. I had all these leftover things from previous recipes and I hate food waste with a burning passion so I started putting things together in the hopes they would taste good. I've heard of ricotta and honey being a very classic middle-eastern pairing so I thought i'd go for it. I grabbed my whipped ricotta out the fridge (the stuff I used for my smashed potatoes) and chucked it on some of my biscuit base from my lemon cheesecake. The end result of this was more delicious than I could've hoped for. Seriously, just give it a go once, I promise you won't be disappointed!!

PRO TIPS

  • I don't even know if I have many pro tips for this because it's so simple. BUT you could be a little fancier, toss the walnuts in a pan with some butter and honey to caramelise them instead of just drizzling the honey on top.

  • You could use cashews or pecans instead of you aren't a walnut-ty person.


Recipe


Ingredients

  • 12 digestive biscuits

  • 1/3 cup of melted butter

  • 1.5 cups of walnuts

  • 250 grams of ricotta

  • 3 tablespoons of honey


Method

  1. Crush your digestive biscuits (or chuck them in a food processor). Mix in your melted butter.

  2. In 6-7 small ramekins press down 2 tablespoons of the biscuit and butter mixture into each ramekin and then place in the fridge until cooled down.

  3. Whip your ricotta with an electric beater for 30 seconds - 1 minute. Spoon 4 tablespoons of ricotta into each ramekin.

  4. Break up your walnuts and sprinkle them evenly across all of the parfaits.

  5. Drizzle a generous amount of honey evenly across the parfaits. Serve cold and ENjoYjoyJOYY!
