Sweet & Salty MnM Cookies

Confession time: I had a little cry today. Completely unrelated to making the cookies but MY GOD did they make me feel better. I'm sure every woman knows the feeling of just being a bit overwhelmed by something (big or small) and for some reason - probably our uterus - we have to let out a few tears. It feels so good after, and half the time, that cry propels you into doing something positive, so yay us.


I have absolutely been trying to eat well and work on keeping a diet that is sustainable long term, as you may notice from my Instagram stories! However, I don't show that I eat chocolate nearly every day or at least something sweet or sweet-adjacent - simply because that isn't nearly as interesting or time consuming to prepare. Today, that thing was cookies, and maybe a few too many (4). I am such a proponent for the intuitive eating mantra despite it being difficult to truly master. So, to those reading this, make those cookies, eat that cake, enjoy your food, fuel your body, but also your soul.


That's all from me - I hope you enjoyed my little pitch to convince you to bake these bad boys. I shouldn't need to though, they are friggin addictive.

PRO TIPS

  • Add whatever candy you want! Chocolate chips, pretzels, cut up mars bar, peanut butter chips, etc. the options are endless.

  • If you don't like the sweet and salty thing, use half the salt - I'm just a massive salt-in-my-cookie person.

  • Stick to the measurements. Stick to the measurements. Stick to the measurements. Stick to the measurements.

  • Depending on how soft you like your cookie will determine your baking time. I like a bit of crisp and a bit of softness so I opt for about 11-12 minutes. However, a little bit more chew requires a few more minutes.



Recipe


Ingredients

  • 3/4 cup of caster sugar

  • 1 cup of light brown sugar

  • 3/4 cup of softened unsalted butter

  • 2 egg yolks

  • 1 egg white

  • 1 teaspoon of vanilla

  • 2 cups of plain flour

  • 1 teaspoon of baking soda

  • 1 scant tablespoon of cornflour

  • 1 teaspoon of salt

  • 1 1/2 cups of MnMs (or your preferred candy)


Method

  1. Preheat your oven to 180℃.

  2. Beat together the butter and sugars until light and fluffy (about 1 minute).

  3. In a separate bowl, whisk the egg yolks until light and fluffy (about 1 minute).

  4. Add the yolks to your butter and sugar mixture and beat to combine, then add the egg white and vanilla. Beat to combine.

  5. In a separate bowl, whisk together the flour, baking soda, cornflour, and 1/2 a teaspoon of salt.

  6. Fold the dry ingredients into the wet ingredients using a wooden spoon or paddle fixture. The mixture should not stick to your hands but should form a cohesive ball.

  7. Mix in half of the MnMs.

  8. Roll the dough into balls the size of 2 tablespoons and place onto a lined baking tray - at least 2cm apart.

  9. Press extra MnMs around the balls (about 5 per cookie).

  10. Bake for 9-13 minutes - See PRO TIPS for advice on softness/chewiness of the cookie.

  11. When you take the cookies out of the oven, leave to cool on the baking tray for a further 5-10 minutes.
