Sour Cream & Chives Chicken Bites
Makes 20 bites
These taste like Sour Cream & Chives chips but with chicken... plus they're baked, so we're cutting out some of the naughtiness right? Right??
2 chicken breasts (2 breasts is about 20 bites, so simply double it if making a big batch)
1 cup of flour
1 tablespoon of paprika
1 tablespoon of white pepper
1 teaspoon of garlic powder
300 grams of crinkle cut ready salted potato chips (I use bluebirds)
250 grams of sour cream
1 packet of french onion soup (I did an ad for Continental on one of my socials using this soup but ad-aside it works really well & has reduced salt so compensates for the salt we add)
1/2 cup of finely chopped chives
Preheat your oven to 200c (fan bake) 220c (bake).
Cut your chicken breast in bite-size pieces (about 10 pieces per breast)
Whisk together the flour, paprika, white pepper, & garlic powder.
In a separate bowl whisk the two eggs together.
Then blitz the chips in a food processor or blender, or crush them in a bag into a fine crumb (a few bigger pieces are okay). Pour this into a bowl and set up an assembly line for crumbing the chicken, starting with flour, then the egg, then the chips.
Place a piece of chicken into the flour mixture and toss it to coat. Then gently shake off any excess flour from the chicken and dredge it through the egg mixture. Let any excess egg drip off the chicken then coat the chicken in the crumbed chips - use your hands to press the chips into the chicken so it is fully coated in chips. Place the chicken on a lined baking tray and repeat with all the other pieces of chicken.
Place the chicken in the oven for 15-20 minutes. Remove them from the oven and set aside.
Mix together the sour cream & french onion soup mix until fully incorporated. Then stir in 2/3rds of the chives. Sprinkle over the remaining chives and serve the dip alongside the chicken bites!
