Lemon and Honey Mustard Salmon

Brain food coming at ya! I made 4 fillets of salmon and it has meant i've had a protein all prepped for the past two lunches and dinners. I've just been adding either a carb or salad or both to it to make it a complete meal. Honestly this marinade (which is 4 ingredients, most of which you might already have) doubles as a delicious salad dressing. Sometimes I just make more of it and add it onto a salad with the salmon.
If you, like me, struggle to eat healthy because it's boring as s*** then there's a chance you just don't have enough time to make healthy but TASTY things. As I am always on a mission to find stuff I love eating you can trust that I have your best interest at heart here, because i'm in the same boat. PRO TIPS
If the marinade is very watery then there's a chance you had a massive lemon. No worries, just add a little bit more honey and mustard to thicken it up so the marinade is more of a glaze.
You can't go wrong with salmon and potatoes. Serve this salmon alongside some potatoes and greens to make it a full meal.
Salad idea! - I roasted some pumpkin in the oven, chucked that into a bowl of spinach, tomatoes, feta, pine nuts, and fig balsamic. Made a bunch of salads from these ingredients, served me for half the week!

Ingredients
Juice of 1 lemon
1 tablespoon of grain mustard
1 tablespoon honey
1 tablespoon of olive oil
Salt and pepper to taste
4 salmon fillets
1/3 cup of chopped parsley, for serving
Method
Mix together your lemon juice, mustard, honey, and half of your olive oil. You want the marinade to be a glaze consistency.
Heat a pan or skillet on a medium-high heat. Add the remaining oil and wait until the oil is glistening.
Place your salmon fillets skin side down in the pan. Season your salmon with a small pinch of salt and pepper. Cook for 3-4 minutes. Just before you flip your salmon, brush the tops of the fillets with your honey, lemon, and mustard mixture - making sure to use a generous amount.
Flip your fillets and cook for a further 3 - 4 minutes.
Take the fillets out of the pan and drizzle over the remaining marinade. Sprinkle the chopped parsley over the top.
Serve with salad or a carb of your choice! (I like mashed potatoes). Enjoy!
