Fresh Homemade Wraps with Grilled Chicken and Hummus

Guys, the month of February is more than hectic, I barely have time to breathe with everything I've taken on - not complaining...was my choice...but still...I'm tired. So yes, this is why posts are very infrequent and late. I will try and get as many out as I possibly can but time is looking rather scarce at the moment. xoxoxo

PRO TIPS

  • Make this a full dinner by chucking in some Persian fries. AKA herbed fries - of which could be made of sweet potato if you so wish.

  • Don't be tempted to overcook your chicken. Take it out of the oven at the required time and slice one of the breasts open to check.

  • Add whatever veggies you like!!

Recipe


Ingredients

  • 2 cups of plain greek yoghurt (for wraps)

  • 4 cups of plain or wholemeal self-raising flour

  • 3 chicken breasts

  • 1 tablespoon of olive oil

  • 1 tablespoon of paprika

  • 1 teaspoon of ground black pepper

  • 1.5 teaspoons of salt

  • 1 cup of cherry tomatoes, diced

  • 1 red onion, diced

  • 1/2 a cucumber, deseeded and cubed

  • 2/3 cup of greek yoghurt (for filling)

  • 3 small yellow and orange bell peppers. thinly sliced

  • 2 cups of baby spinach (or whatever salad/lettuce you wish to use)

  • 1/2 cup of hummus


Method

  1. Preheat your oven to 220℃ (428℉).

  2. Place your chicken breasts on a baking tray. Rub your olive oil, paprika, black pepper, and salt over the top of your chicken breasts. Place in the oven for 18 minutes. Once out of the oven, shred the chicken with two forks and set it aside.

  3. Meanwhile, prepare your veggies and set them aside.

  4. Mix together the diced tomatoes, onion, and half of the cucumber with a pinch of salt and pepper and set aside. Mix the other half of the cucumber with the greek yoghurt (for filling) and set aside.

  5. Once your filling's are prepared you can make your fresh wraps. Mix together the flour and greek yoghurt (for wraps). You want to make sure the dough is not too sticky nor too dry. So add more of either the greek yoghurt or the flour depending on the consistency. Create four equal balls and roll them out on a surface sprinkled with a bit more flour. You should roll them out pretty thin (about 1/2cm thickness) but you can easily use your hands to press them down and pull them out - like pizza dough.

  6. Brush a pan with olive oil and heat it up on a medium heat. Place one wrap on the hot pan and cover with a lid, after 3 minutes flip it over and leave uncovered to cook for a further 3 minutes. Repeat with all wraps.

  7. Now you have all the components for your wraps! Spoon a tablespoon of hummus then the greek yoghurt and cucumber mix on to the wraps. Layer in a handful of spinach, two tablespoons of shredded chicken, a few bell peppers, and a spoonful of the tomato mixture. Wrap it up and eat it!! Enjoy!!
