The BEST Salad Niçoise

HI! YES! THIS IS HEALTH AND HAPPINESS ROLLED INTO ONE! I've decided i'm going to keep these intros short because there's lots of funny memes about food bloggers and I'm feeling attacked. Just to let you know, the dressing for this is so tasty and so easy I can't recommend it enough. I had fingers and toes crossed it would be good and lo and behold it worked.

PRO TIPS
It's not a difficult thing to make so I don't have many pro tips other than to add your potatoes to the salad when they aren't super hot to avoid wilting the lettuce!
Add Kalamata olives if you like them, I just don't rate them.

Recipe
Ingredients
1 teaspoon of olive oil
2 fillets of salmon
3 eggs, hardboiled and quartered
2 bunches of cos lettuce
1 cup of lambs lettuce
2 cups of green beans, blanched for 2 minutes in boiling water
4 cups of baby potatoes, boiled and sliced
3 radishes, thinly sliced
1 avocado, sliced
2 teaspoons of capers
1/4 cup of chopped parsley
2 teaspoons of dijon mustard
2 tablespoons of apple cider vinegar
Method
Heat your olive oil up in a pan on a medium-high heat. Pan fry your salmon fillets for 3-4 minutes on each side. Set aside and start to build your salad.
Lay down your cos lettuce on large serving plate. Scatter your lambs lettuce and green beans on top. Followed by your potato slices, salmon, radishes, avocado, capers, and your eggs.
Mix together your parsley, dijon, and apple cider vinegar. Spoon this over the salad when ready to serve.
