Dark Choc & Sea Salt Homemade Granola

Makes 6-8 Portions

 

OOOOhhhhh I love making homemade granola, protein balls, and healthy baked goods! It's always a lot more fun and relaxed because there isn't a right way to do it and you can chuck in your favourite goodies. I will say, the first time I made this, I burned it and everyone had to fake a smile and say 'you can tell it would've been good...'. It's true, it WOULD HAVE been good, so I made it again, and it was good.

PRO TIPS

  • This mixture can burn very easily, so keep the heat low, continually check on the mixture and keep tossing every few minutes.

  • You can put whatever you want in this - your favourite nuts, your favourite seeds, your favourite syrups (don't have maple syrup? Use honey or brown rice syrup instead!)

  • If you aren't a fan of chocolate granola, remove the cocoa powder, and go for a nut butter melted down instead.


Recipe


Ingredients

  • 3 cups of rolled oats

  • 1/4 cup of cocoa powder

  • 1/4 cup of desiccated coconut

  • 1 cup of roughly chopped nuts (walnuts. cashews, almonds, pecans, macadamia nuts etc.)

  • 1/2 cup of maple syrup

  • 3 tablespoons of coconut sugar or brown sugar

  • 1/2 cup of coconut oil

  • 1/2 teaspoon of vanilla bean paste (or 1 teaspoon of vanilla extract)

  • 1/2 cup of dark or milk chocolate chips

  • A pinch of flaky sea salt

Method

  1. Preheat your oven to 165℃.

  2. Pulse/blend together your rolled oats, cocoa powder, and coconut.

  3. Pour the mixture into a large mixing bowl and stir in the chopped nuts.

  4. In a small saucepan melt the maple syrup, coconut sugar, and coconut oil together just until melted. Remove from the heat and stir through the vanilla.

  5. Pour the wet ingredients into the dry ingredients and mix together thoroughly.

  6. Pour the granola mixture over a lined baking tray - about a 2cm thick layer.

  7. Bake in the oven for 15-18 minutes. Continually move the granola around every 3 or so minutes to prevent burning.

  8. Sprinkle your sea salt over the top of the granola.

  9. Leave to stand out of the oven for 5 minutes and then sprinkle over your chocolate chips.

  10. Store this granola in a sealed container and it'll last you up to 2 weeks. (Hint: the granola is better the day after baking so leave it for 24 hours and enjoy for the rest of the week)

  11. Serve over some yoghurt with fruit and honey or eat with an acai/smoothie bowl.
