Avocado, Honey, Crema
Makes 1 cup of crema
I have a love-affair with simple; we are whispering sweet nothings into each other's ears, tearing away from busy streets, stealing moments in alleyways, and brushing hands in crowded rooms. If something is simple to make but appears complex or just tastes really fricken good, then I am throwing my wedding ring into the ocean. More accurately my 5 dollar, rusted, Lovisa ring, because I am happily unmarried and horrific at keeping jewellery, but I digress.
I wish I could say 'my philosophy is XYZ' but honestly, I'm still trying to narrow that one down. However, one of my future philosophies sure as heck will be 'less is often more' - or something to that effect. This avocado crema is extremely simple, comes together in minutes, and wows the socks off anyone it meets. I have watched people eat it on top of a taco, on nachos, with veggies, as a salad dressing, on toast, and even off of their own finger before. Without fail, their response is some combination of a surprised (but pleased) expression, a satisfying 'mmmmmmm', and a gratifying comment such as 'I could eat a bucket of that'. I pretty proudly let everyone in on the secret that it's just an avocado, coriander, a garlic clove, honey, lime juice, and salt. It's absolutely nothing fancy, it's probably made all over the world by multiple people with slightly different ingredients or quantities and yet, it never fails to impress. I don't purport to be bringing you anything new with this one, but I have to share it because, at some point I started making it, and I have never looked back.

Recipe
Ingredients
1 large avocado
1 cup of coriander (including stems)
Juice of 1 lime
1 tablespoon of honey
1 clove of garlic, minced or chopped
1 pinch of salt
Method
Blend all ingredients together and serve on top of tacos, as a salad dressing, with nachos, as a veggie dip, or anything else you might like it on!
